Pamonha is a typically Brazilian delicacy made from green corn and milk. Very popular in Piracicaba, the recipe is said to have been brought by African slaves, but it is also believed to be related to indigenous food. See below how to prepare delicious mush with the help of Specialfood!
Ingredients to make delicious mush:
12 units of green corn cobs with their straw
1 cup of crystal sugar
1 cup of milk (240 milliliters)
2 tablespoons of butter
1 pinch of salt
How to make delicious mush:
The first step in the delicious mush recipe is to remove the straw from the ears, which should be large and flexible, and reserve.
Grate the cobs, preferably on a large grater, until you reach the cob. Scrape the remaining contents with a spoon.
Place the corn kernels in a bowl with the remaining ingredients and mix until you get a smooth mixture. This mixture will be delicious mush!
Now take the straw from the cobs and cut them into large rectangles. Overlap two straws and, on top of them, place a portion of the previous preparation; Fold the sides of the straws as if you were wrapping them and tie them tightly with a strip of straw or twine. Repeat until all the mush mass is exhausted.
Tip: If the cob straw is not flexible enough, boil it in water for a few minutes.
Place the wrapped mussels to cook in a pan of boiling water for 45 minutes, or until the straw turns yellow. For the delicious mush to cook evenly, place the corn cobs on top.
